Issues of food product falsification using raw and drinking milk as an example

Abstract. The production and sale of falsified dairy products is one of the barriers to the development of the dairy industry, contributes to unfair competition in the market, and misleads consumers about the quality and usefulness of milk when choosing it. The article uses the example of raw and drinking milk to examine the types and methods of its falsification, define the criteria for the authenticity of milk, and provide regulatory documents for assessing the compliance of milk with these criteria. The liberal model of technical regulation of the consumer market, which was put into effect, is not fully effective in preventing the appearance of falsified dairy products, including milk, on the market and the growth of falsified products in 2024, according to expert data.

Abstract. This article presents the results of a comparative study of the essential oil of coriander fruit (Coriandrum sativum L.). The purpose of the work was a comparative assessment of the chemical composition and technological parameters of extraction of essential oil by hydrodistillation from two samples of commercial and grown in experimental fields of the Timiryazev Russian State Agrarian University. By gas chromatography-mass spectrometry, it was found that the main component of the essential oil in both samples is linalool (72.70 and 75.02 %), which determines the biological activity. The secondary components (camphor, geraniol, α-pinene, etc.) form a complex aroma and application potential. The key difference was the extraction rate. A sample of essential oil grown in experimental fields of the Timiryazev Russian State Agrarian University showed a yield of 1 ml of oil 1,667 times faster (90 minutes versus 150), despite the similar chemical composition. This difference is explained by the influence of varietal characteristics and agrotechnical factors. The results emphasize the importance of taking into account the origin of raw materials to optimize the industrial production of essential oil from coriander.

Abstract. Active promotion of a healthy lifestyle and media support have contributed to a growing interest in physical education and sports, which has increased the demand for specialized sports nutrition products. However, as of today, a significant market share is occupied by low-quality imported products and supplements that do not meet the physiological requirements of an athlete's body. The aim of the present study was to develop a specialized beverage for athletes in strength sports based on biologically active substances derived from fermented fruits that are non-standard in quality due to minor external defects. This complex of bioactive substances (BAS) was obtained from a fruit mixture (apples, bananas, oranges) by treatment with specific enzymes followed by lyophilization of the resulting liquid fraction. Mathematical models of the beverage formulation were developed, based on which the content of the main components was optimized and the composition of its dry form was substantiated (fermented fruit complex, whey protein concentrate, silicon dioxide, xanthan gum, sunflower lecithin). A technological process for manufacturing the beverage for strength athletes, named "BioCarb", has been proposed; it ensures quality stabilization in the dry form and the formation of a uniform consistency in the reconstituted form. The specific organoleptic properties of the beverage that determine its consumer appeal have been identified. The chemical composition of the product in its dry form was investigated, and based on the results, it was classified as a gainer (a protein-carbohydrate product). The biological value of the beverage was assessed, and based on its indicators, it is considered functional due to its content of vitamins and minerals essential for strength athletes. Recommendations for the consumption of the beverage during different periods of athletic activity (preparatory, pre-competition, competition) have been substantiated. The economic efficiency of producing the developed beverage has been demonstrated.

Abstract. The article presents experimental studies to determine the rational values of the mass fraction of the polyelectrolyte complex of marine polysaccharides chitosan and sodium alginate in the composition of model food systems. The basis of food systems is crushed and heat–treated salmon liver and milt. The use of a complex of polysaccharides makes it possible to impart specified properties (organoleptic, rheological) to the finished product. The results of organoleptic and instrumental evaluation of model food systems using mathematical data processing are compared. Rational values of the mass fraction of a solution of a polyelectrolyte complex of chitosan and sodium alginate in the composition of the finished product were obtained according to the type of "spreadings" from recycled salmon.

Abstract. Experimental data are presented to assess the effect choice of control sample on the values indicator of the relative biological value snack products from the small-eyed macrurus. Based on the literature data, a brief justification is given for the use the ciliate Tetrahymena pyriformis as an indicator organism for biotesting. The paper provides a description of the control samples (raw materials, wheat flour, casein, and semi-finished products before processing) based on their evaluation criteria. Graphical data are presented to show the growth dynamics test culture over the days of experiment on the test media. The calculated values of the relative biological value and the coefficients of biological activity studied experimental models are given. A comparative analysis allowed us to establish the influence of introduced plant additives on the composition of experimental models, as well the technological stage of processing the semi-finished products. Regardless of the criteria for selecting control sample, it was found that the experimental models with the addition of pea isolate had higher values of biological value, which were 119% for the raw material, 125% for wheat flour, 64% for casein, and 116% (dried) and 113% (roasted) for the semi-finished product before heat treatment.

Abstract. The article presents calculations of the main economic performance indicators of a manufacturing enterprise for processing recycled Pacific salmon. Economic efficiency was calculated using two production models. The first model includes the production of frozen salmon products from salmon milt, and feed flour and fish oil from liver. The second is the production of liver paste and salmon milk, and frozen products from the rest of the milk. The work took into account the cost of production, including the cost of packaging and raw materials at domestic prices. The calculation results can be used to justify the expansion of the product range, which can be recommended for implementation at enterprises engaged in salmon processing.

Abstract. In the context of modern economic instability, large retail chains are forced to take strategic initiatives to optimize purchase prices in order to ensure product affordability and maintain stable sales levels. As a result of this process, there is a tendency for an increase in cases of falsification of goods, which allows manufacturers to maintain continuity of supply. To compensate for losses, manufacturers resort to various methods of falsification, including the use of substandard ingredients, violation of technological regulations, and even forgery of accompanying documentation. This phenomenon has a significant impact on product quality, consumer preferences, and overall market stability. One of the key factors hindering the spread of falsification is the high degree of complexity of its implementation. Existing methods of product quality control and monitoring, as well as strict regulatory requirements from government agencies, create significant barriers for unscrupulous manufacturers.

The article analyzes modern technologies used for quality monitoring at all stages of production. These methods ensure the prompt identification of potential risks and confirmation of product compliance with established standards, which leads to a reduction in the level of economically deliberate falsification of products.

Abstract. The composition and characteristics of the sensory properties of a food product largely depend on the raw materials and processing technology, including the widely used heat treatment process. The paper examines the muscle tissue of three species of fish of the genus Macrourus sensory properties, which were exposed to heat treatment for a short period of time. The average parameters of heat treatment were used in the experiment.: T =100 °C, τ=12 min, divided into intervals of 3 min. A verbal description of the sensory properties of the study objects is provided as initial information, accompanied by an emotional hedonic assessment performed by an expert group.  The quantitative assessment of sensory properties was carried out on the basis of seven-point interval scales developed by the authors for each single indicator with verbal accompaniment of each score. The established changes in the sensory properties of fish muscle tissue under the influence of heat treatment of a short time interval generally correspond to similar facts known in the technology of aquatic biological resources. Particular modes cause changes in sensory properties with individual differences that result from: qualitative changes in the positive–negative range; acquisition, replacement, or loss of individual indicators; time-related changes in the intensity of the main quality indicators; stationary periods (complete preservation of properties) within the experiment. Hedonic assessment can be recommended to be used simultaneously with other types of study of sensory properties or in circumstances critical to the time and staff of experts.

Investigation of dynamics, scientific substantiation of the hypothesis about the mechanism of moisture removal and optimization of microwave vacuum drying of semi-hard cheese

Abstract. The strategy for improving the quality of food products in the Russian Federation until 2030 directs food enterprises to increase their competitiveness. The application of ultrahigh frequency waves to semi-hard cheese under vacuum makes it possible to produce a new competitive dried product with a porous structure and brittle consistency. The study analyzes the dynamics of variation in the mass fraction of moisture of semi-hard cheese during its vacuum-microwave drying. Under the action of an ultrahigh frequency magnetic field under vacuum, moisture is removed from processed products at high speed, tearing the casein matrix of semi-hard cheese and forming a porous structure. A hypothesis has been put forward about the mechanism of this phenomenon, which consists in the accumulation of instability of the «protein matrix» of cheese casein under the action of ultrahigh frequency microwaves and superheated liquid pressure, followed by rapid vapor formation of such force that leads to the rupture of the casein «protein matrix» with the formation of a porous structure. Optimal and rational parameters of vacuum-microwave drying of semi-hard cheese were determined by the method of orthogonal central compositional planning of the experiment. In the experiment, the drying time varied from 8 to 12 minutes with a variation interval of 2 minutes and the proportion of magnetron power from 30 to 70% with a variation interval of 20%. The optimum, as the extreme of the obtained functional dependence, was the following values: the drying time was 10 minutes, and the proportion of magnetron power used was 50%. The rational parameters, as the closest inflection area of the response surface of the obtained functional dependence, varied as follows: the drying time was 9,5-10,5 minutes, the proportion of magnetron power utilization was 45-55%.

Evaluation of consumer preferences for culinary fish products among the population of the Astrakhan region and Russia

Abstract. Using the Astrakhan Region as an example, it was shown that the most promising area for expanding the range of culinary fish products is the production of paste-like products from freshwater fish, such as crucian carp, common carp, and white bream, whose size and weight characteristics do not allow for a high yield of edible fish due to their specific morphometric characteristics. A questionnaire was developed and an online and offline survey of 350 respondents was conducted. Consumer preferences for culinary fish products among the population of the Astrakhan Region and Russia were assessed. The majority of respondents were aged 40–49 (approximately two-thirds of respondents). Women (70%) predominated. Our research showed that the majority of respondents (75%) consume fish very rarely, while only 1.7% of respondents include fish products in their diet almost daily.

We found that over 22% of respondents prefer minced products. It's worth noting that consumers of minced meat products are in favor of expanding the range of these products, including rillettes, pâtés, and puddings, as well as considering improvements to traditional recipes. Based on a study of consumer demand and taste preferences, expanding the range of paste-like fish products with increased nutritional value remains equally promising. To disseminate information about expanding the range of such products, more active use of online resources, including social media, is needed.

Abstract. This study presents the results of a parasitological examination of mass invertebrate species collected in 2024-2025 in the bays of the northern coast of Russky Island: Ajax, Posyet, Akhlyostycheva, Truda, Novik, Bezymyannaya. Over 1000 specimens of gastropods and bivalves, crabs, hermit crabs, and echinoderms were examined. Larval and mature stages of helminths were diagnosed using light microscopy. The species composition of the helminth fauna was determined. In 2025, we revealed the massive infestation of crustaceans with trematode metacercariae, the highest taxonomic diversity of helminths was recorded in the crabs Hemigrapsus sanguineus. Based on morphological analysis, the cercariae and metacercariae of Cercaria fluviocinguli II Rybakov, 1989, were assigned for the first time to the genus Maritrema (family Microphallidae). New second intermediate hosts for Maritrema sp. were identified: the shore crabs Hemigrapsus sanguineus, H. penicillatus, Cancer amphioetus, the stone crab Hapalogaster dentata, and the hermit crabs Pagurus middendorffii and P. proximus.

Abstract. This article provides a comprehensive analysis of the distribution of quotas for the extraction (catch) of terpuges in the East Kamchatka fishing zone. The main focus is on the dynamics of the distribution of the total allowable catch (TAС) and the actual catch, which makes it possible to assess the degree of development of the fishing resource, the distribution of TAС by type of quotas and the shared distribution of quotas among users in the period from 2020 to 2024.

Size-age composition and growth rate of pollock Gadus chalcogrammus Pallas off the northeastern coast of Sakhalin according to 2021

Abstract. The paper presents the results of a study on the size-age composition and rates of linear and weight growth of walleye pollock (Gadus chalcogrammus Pallas) along the northeastern coast of Sakhalin based on trawl survey data from 2021. The age of the fish was determined using otoliths, which allowed for reliable estimates of growth parameters. It was found that the studied portion of the population consisted of individuals aged from 2 to 9 years, with an average age of 5.6 years. Calculations using the Bertalanffy equation showed that the pattern of linear growth in walleye pollock is asymptotic: rapid growth is observed until the age of 4-5 years, after which the growth rate begins to decline. The weight growth of walleye pollock is characterized by a slight increase in the average body mass after 4-5 years of life. Sexual differences in growth dynamics manifest as a lag in the growth rate of males compared to females.

Abstract. The article highlights the features and prospects of Russian-Chinese cooperation in the field of marine aquaculture. The historical background, current state and key achievements of bilateral cooperation in the field of aquatic biological resources are considered. Special attention was paid to the legislative framework, organizational mechanisms and potential areas for further deepening cooperation. The issues of economic feasibility, technological advances and risk factors that hinder effective interaction are raised. The expected vectors of development of interstate cooperation are determined, recommendations are formulated to strengthen the positions of Russia and China at the international level in the segment of aquaculture products.

Abstract. The article assesses the effect of combined use of two phytohormones with different structures (auxin and gibberellin series) on the growth and biochemical composition of microalgae Isochrysis galbana culture. Gibberellic acid and indole-3-acetic acid were used as hormones. The phytohormone mixture effect on the cell count and growth constants of the Isochrysis galbana culture is shown. The content of the main biochemical components (protein, carbohydrates, lipids and chlorophyll) in microalgae cells culture treated with the hormone mixture and the control group is compared. It was found that culture growth process under the influence of phytohormones mixture observed throughout the experiment. It was shown that the population growth constants did not differ in the experimental and control groups over the entire period of the experiment. Multidirectional effects of the phytohormone mixture on the content of protein, carbohydrates, lipids and chlorophyll in the cells of the Isochrysis galbana microalgae culture were established. An increase in protein concentration was noted after 3 days of experiment. Further cultivation did not have a significant effect on the protein content in the control and experimental groups. Decrease in carbohydrate concentration was noted in the control and experimental groups during the study. At the same time, the carbohydrate content in the experimental group was higher than in the control throughout the entire experiment. An increase  lipid content was shown in the experimental and control groups after three days of the experiment. Subsequently, a decrease in lipid content was observed in both experimental groups. Accumulation of chlorophyll in Isochrysis galbana cells was established in the first seven days of the study in both groups.

Abstract. The study of the deformation characteristics and features of the fluid flow around a nodeless polyethylene network during the interaction of a liquid medium (Fluid-Structure Interaction, FSI) is a complex task requiring in-depth analysis and application of modern methods of computational fluid dynamics and mechanics of deformable solids. In this paper, a detailed study of the behavior of the network under the influence of fluid flow is carried out, which allows us to identify key deformation mechanisms and assess their impact on the flow characteristics. Special attention is paid to taking into account the connection between the mesh web and the liquid medium, which is an important aspect for the correct modeling of interaction processes.

Abstract. This paper examines the physical process of hauling catches on stern trawler trawlers using the slipway method. Experience has shown that slipway operations can result in peak loads, leading to emergency situations that threaten crew health and impact product quality and the longevity of fishing machinery. Previous studies using a mock-up experimental setup allowed us to determine the relationship between the force generated in the haul-out end of the haul-out winch and various factors characterizing the vessel's design and fishing system. To validate the validity of this relationship for calculating the haul-out force of a trawl bag containing the catch, sea trials were conducted for full-scale trawl systems on the research vessel STM Atlantis. The results of these sea trials included force charts describing the change in the force generated in the haul-out end during haul-in of trawl bags. By comparing the calculated hauling force values ​​obtained using the experimental relationship with additional experimental work on a mock-up rig replicating the conditions encountered during measurements on the Atlantis STM, the scaling factors were refined and similarity criteria were verified. Comparison of the full-scale test results with those obtained on the mock-up rig and the calculated values ​​obtained using the relationship showed good convergence. This allows us to recommend the experimental relationship obtained on the mock-up rig for calculating the hauling force of trawl bags on fishing vessels. The sea trial confirmed the feasibility of studying the physical process of raising a trawl with a catch on a mock-up rig that simulates the actual operating conditions of commercial trawling schemes.

Abstract. Currently, most commercial vessels run on heavy fuel oil having a high energy density due to which vessels can cover long distance using a little fuel. Moreover, it is rather cheap as it is a byproduct of the oil refining process. However, these advantages have another side. The heavy fuel oil waste not only contributes to climate change but also poses numerous risks to the environment and human health. The maritime industry is actively seeking the cleaner and more sustainable sources of fuel and energy to reduce its environmental impact. As the industry strives to reduce emissions, these alternative fuels are becoming increasingly important to achieving global climate change goals, particularly the IMO's goal of net-zero emissions by 2050. Over the past year the options such as ammonia and methanol have received significant research, along with innovations in wind propulsion systems. All have attracted considerable attention as potential solutions for a greener future for maritime transport. This paper examines alternative fuels that could help achieve the International Maritime Organization's strategic goal of decarbonizing marine propulsion systems. Both their advantages and the new safety risks associated with these fuels are noted.

Abstract. This article addresses the scientific problem of identifying the complex of factors that caused significant variability in the technological trajectories of industrial fisheries development in leading fishing nations from the early 19th to the late 20th centuries. The research is based on a comparative historical-institutional analysis, enabling a cross-country comparison of the role of the state, foreign policy context, economic strategies, and environmental challenges in shaping national models of sectoral modernization. Despite common global technological trends, the study revealed a profound divergence in the technological trajectories of industrial fisheries development across different countries and historical periods. It is proven that the long-term success of technological development in industrial fisheries is determined not so much by the introduction of new technologies per se, but by the quality of institutions capable of harmonizing technological innovations with the tasks of sustainable bioresource management.
