Abstract. The article is devoted to the study of the quality of table red wines of various terroirs. The organoleptic characteristics of wines, including the descriptor profile, and the physicochemical parameters of wines, including antioxidant activity (AOA), were studied. Based on the results of the correlation analysis, it was proposed to use AOA as one of the wine identification markers.

Application of blockchain technology in order to ensure the traceability of food products: current state and prospects

Abstract. Blockchain technology is a distributed ledger technology, and it is expected to face some difficulties and challenges in various industries due to its transparency, decentralization, protection against unauthorized access and encryption security. In recent years, due to economic development, the traceability of food products has been given increasing attention. Based on a systematic critical analysis of the literature, the causes of the problems of ensuring food traceability and the analysis of modern blockchain technology, including the analysis of the experience of ensuring product traceability in Russia and abroad, advantages and disadvantages, this review formulated the current state of the application of blockchain technology in the food industry and proposed prospects for its application. Finally, the problems of the blockchain technology itself and the difficulties of its application in order to ensure the traceability of food products were analyzed.

The results of the study showed that blockchain is a promising technology for ensuring food traceability.

Abstract. Artificial intelligence over the past few decades has embodied the latest technologies in the food industry due to the growing demand for food due to the increase in the world's population. The possibility of using these intelligent systems in various fields, such as food quality determination, application in product control tools, as a food classification tool and for the purpose of forecasting, have increased their demand in the food industry.

Therefore, this article examines these intelligent systems in comparison of their advantages and limitations, and provides guidance for choosing the most appropriate methods to improve future developments related to artificial intelligence in the food industry. In addition, the importance of integrating these systems with other devices such as electronic nose, electronic tongue, computer vision system, which will benefit both industry participants.

Abstract. In the paper showed the results of cultivating Chlorella vulgaris in the open type of photo bioreactors to improve the water quality of fish ponds productivity. It was established, that for large-scale cultivation of chlorella in open systems we should use some strains adapted to natural waters can be used.

AbstractThe development of unmanned navigation has been increasing especially rapidly in recent years. That is why it is not surprising that this topic is being heard more and more often in the Russian scientific community. The Academy of Water Transport of the Russian University of Transport has announced a strategic project No. 3 on the topic "Electronic navigation and unmanned (autonomous) navigation", the implementation period of which is 2021-2030. This article is devoted to a detailed review of the project, its purpose and relevance, planned tasks, as well as side processes implemented within the framework of the project. All programs of various levels of education are considered: secondary special education, additional professional programs and higher education. Within the framework of the project, it is planned to open educational programs in the field of navigation and operation of autonomous vessels, operation of ship power plants of autonomous vessels, operation of automation systems of autonomous vessels, management of autonomous fleet, design of coastal transport infrastructure for autonomous fleet, in the field of design of autonomous / small-scale vessels, management of autonomous small vessel, ship automatic control systems, etc. The work uses reliable sources of information, including information taken from the official website of the Russian University of Transport.

AbstractSafe and trouble–free navigation is the main goal of the shipping industry. To achieve this goal, an analysis of previous marine accidents is necessary. The reasons of such accidents should be found and, based on the results of the analysis, the effective corrective measures that can help reduce the number of such undesirable events in the future and increase the safety of navigation should be undertaken. As the human factors are recognized to be the reason of 80–85 % of all marine accidents, this research has focused on the analysis of human factors in marine accidents.

AbstractMarine accidents are of great concern around the world, especially because of their impact on the environment. The article discusses the main types of accidents on the ship. The world statistics of losses of ships by their types and causes of death are given. Attention is focused on technical emergencies. A variant of the development of cause-and-effect relationships that led to an emergency is considered, using the example of the occurrence of ship fires.

Features of operation of fishing vessels in ice conditions

AbstractWinter navigation is a complex but common operation in the seas of the Far Eastern region. Fishing in freezing seas has a specific problem – the risk of damage to the hull from a collision with ice. When designing vessels sailing in areas covered with ice, ice loads caused by the interaction of the vessel with ice represent the dominant source of load. The specifics of fishing vessels is that the landing may change during operation. And if the trim change is provided for in the requirements for the installation of the upper and lower boundaries of the ice belt, then the presence of a roll is not assumed. The paper describes the characteristics of ice navigation, the reaction of the vessel's hull to ice loads, as well as the risk of damage to the hull above the ice belt during fishing. Formulas are given that take into account the magnitude of the dynamic roll angle on the circulation, depending on the state of stability, the radius of curvature of the trajectory and the speed of movement.
