Аннотация. В статье рассмотрена проблема технического регулирования показателя диоксида серы в кондитерских изделиях на территории Евразийского экономического союза (ЕАЭС). Проведен анализ теоретических основ влияния показателя диоксида серы на безопасность и качество пищевой продукции. Проанализирована нормативная документация с установленными требованиями к сульфитам в кондитерских изделиях, а также стандарты на методы определения показателя двуокиси серы. Результатом проведенного анализа нормативной документации стал вывод о несовершенстве системе технического регулирования данного показателя.

Abstract. The article considers the problem of technical regulation of the sulfur dioxide index in confectionery products on the territory of the EAEU. The analysis of the theoretical foundations of the influence of sulfur dioxide index on the safety and quality of food products is carried out. The regulatory documentation with the established requirements for sulfites in confectionery products, as well as standards for methods for determining the sulfur dioxide index, are analyzed. The result of the analysis of the regulatory documentation was the conclusion about the imperfection of the system of technical regulation of this indicator.
