Применение искусственного интеллекта в пищевой промышленности

Аннотация. Искусственный интеллект за последние несколько десятилетий воплотил новейшие технологии в пищевой промышленности в связи с ростом спроса на продукты питания из-за увеличения населения мира. Возможность применения этих интеллектуальных систем в различных областях: определение качества пищевых продуктов, применение в инструментах контроля продукции, как инструмент классификации пищевых продуктов и прогнозирование – усиливает их спрос в пищевой промышленности.
Рассматриваются эти интеллектуальные системы в сравнении их преимуществ и ограничений. Сформулировано руководство для выбора наиболее подходящих методов для улучшения будущих разработок, связанных с искусственным интеллектом в пищевой промышленности. Кроме того, подчеркивается важность интеграции этих систем с другими устройствами, такими, как электронный нос, электронный язык, система компьютерного зрения. Это принесет пользу как участникам отрасли, так и потребителям.

Abstract. Artificial intelligence over the past few decades has embodied the latest technologies in the food industry due to the growing demand for food due to the increase in the world's population. The possibility of using these intelligent systems in various fields, such as food quality determination, application in product control tools, as a food classification tool and for the purpose of forecasting, have increased their demand in the food industry.
Therefore, this article examines these intelligent systems in comparison of their advantages and limitations, and provides guidance for choosing the most appropriate methods to improve future developments related to artificial intelligence in the food industry. In addition, the importance of integrating these systems with other devices such as electronic nose, electronic tongue, computer vision system, which will benefit both industry participants.
