Регламентирование содержания контаминанта акриламида в пищевой продукции

Аннотация. В Российской Федерации постоянно совершенствуется система токсиколого-гигиенической оценки и контроля химических контаминантов пищевой продукции за счет использования новых методов их анализа и получения актуальных научных данных и заключений по обоснованию допустимых уровней их содержания. Из-за отсутствия контролируемых норм содержания в пищевых продуктах канцерогена акриламида существует острая необходимость разработки и внедрения методики достоверного количественного определения и контроля его содержания в пищевых продуктах со сложным компонентным составом, которая может быть использована в практике испытательных лабораторий. Рассмотрены закономерности появления акриламида в пищевых продуктах и установлены механизмы его влияния на здоровье человека при потреблении. Также описаны и проанализированы существующие методы контроля акриламида в пищевых продуктах (метод газовой хроматографии – масс-спектрометрии и метод жидкостной хроматографии и тандемной масс-спектрометрии) и разработан проект рекомендаций по регламентированию акриламида в пищевых продуктах.

Regulation of the content of the contaminant acrylamide in food products

Abstract. In the Russian Federation, the system of toxicological and hygienic assessment and control of chemical contaminants in food products is constantly being improved through the use of new methods for their analysis and obtaining up-to-date scientific data and conclusions to justify the permissible levels of their content. Due to the lack of controlled standards for the content of the carcinogen acrylamide in foods, there is an urgent need to develop and implement a method for reliable quantitative determination and control of its content in foods with a complex component composition, which can be used in the practice of testing laboratories. The article examined the regularities of the appearance of acrylamide in food products and established the mechanisms of its effect on human health when consumed. The existing methods for the control of acrylamide in food products (gas chromatography-mass spectrometry method and liquid chromatography and tandem mass spectrometry method) are also described and analyzed, and draft recommendations on the regulation of acrylamide in food products have been developed.
