Application of transglutaminase in the food industry

Abstract. This review summarizes information about the properties of the transglutaminase enzyme, which provides biocatalytic crosslinking of proteins of various origins and the possibilities of its use in food production. Modern data on the substrate specificity of the enzyme, reactivity and distribution in biological objects, including aquatic biological resources, are analyzed. The directions of application are shown and the safety of use in food products is justified.

Morphophysiological characteristics of Black sea scorpio fish and oxygen level at Sevastopol bays in 2019–2020

Abstract. A number of parameters of the gills of the Black Sea scorpionfish Scorpaena porcus L. were studied for the period 2019–2020 to determine their dependence both on the length of individuals and on the chronic influence of habitat conditions. As the main indicators of the quality of the habitat and the main factor affecting the respiration of fish, data on the oxygen content in the water of the Sevastopol bays, the degree of water saturation with it, and also BOD5 were given. It was found that the length, width, and density of filaments on the gill arch depend on the size of the fish. The absence of significant differences in the gills morphometric characteristics and the data on oxygen in the water prove the similarity of the ecological conditions in the bays of Sevastopol.

Analysis of development of the resource potential of the North Kuril zone in the period 2015–2019

Abstract. The analysis of the development of the resource potential of the West Bering Sea zone in the period from 2015 to 2019 is carried out. We have studied the commercial objects, the production of which is carried out in this zone. The analysis of the development of the total allowable catch is carried out, undeveloped objects are identified. The dynamics of the change in the degree of development of the ТАС for each undeveloped object is considered.

Size composition of the one-year primorsky scallop bay of the Severnaya (Peter the Great Bay) in 2014–2016

Abstract. The size composition of a one-year-old primorsky scallop raised by the hanging method in Severnaya Bay (Peter the Great Bay) in 2014–2016 was studied. The highest dimensional indicators are characteristic of the growing area, located in the seaward part of the bay, where hydrological and hydrochemical conditions are most favorable for cultivating the scallop. An analysis of the interannual dynamics of the scallop size composition showed that in 2014 the hydrological situation in Severnaya Bay was the most favorable for the growth of juvenile scallop.

Some biological characteristics of the bivalve colluscus corbicula japonica (Corbicula japonica) in the river Razdolnaya (Primorskiy region)

Abstract. Some biological parameters of Japanese corbicula in the Razdolnaya river in autumn 2015 were studied. It was shown that the size composition varies from 4,9 to 41 mm, the average shell width for females is 28,84+0,1, for males, 21,34+0,03. The weight composition ranged from 0,4 to 18,9 g. The average weight of females was higher than that of males and amounted to 4,46+0,02 and 4,01+0,01, respectively. The linear and weight growth of females and males of corbicula is similar. In clusters of Japanese corbicula, males prevailed in a ratio of 2 : 1.

Some biological characteristics of carp grown in peasant farming

Abstract. Some biological indicators of carp grown in a peasant farm in the village of Yaroslavsky (Khorol district, Primorsky region) have been studied. In 2019, 2020, the length of the carp ranged from 17.5 cm to 25.5 cm. The average weight of carp in the years studied was 225±17.12 g and 238±2.24 g, respectively. The catches were dominated by males. All the fish had gonads in the second stage of maturity. The analysis of some biological indicators of the studied fish in the feeding pond of the full-system economy made it possible to get an idea of the state of carp and evaluate it as satisfactory. The findings complement some of the biological characteristics of farm-grown carp and will be useful for aquaculture professionals.

Fishing rules in the Russian waters of the far eastern seas in the initial period of the development of biological resources

Abstract. The paper analyzes the evolution of methods for the catch regulating of aquatic biological resources  in the Far Eastern seas of Russia in the late 19th and early 20th centuries. It was found that attempts to control the state of aquatic biological resources with the aim of their rational exploitation have been undertaken since the beginning of the development of the fishing industry. The protective measures were initially of a fiscal, then of a preventive nature. Rational precautionary approach to stocks emerged to 1910. The structure of the fishery protection bodies has been formed, capable of ensuring control over the observance of the Fishing Rules.

Design and efficiency of the self-regenerating filter with high regenerating capacity for cleaning fuel and lubricants on ships

Abstract. The relevance of research on the development of a ship self-regenerating purifier of fuels and engine oils with a high fineness of screening and throughput is shown, it is emphasized that the existing filters of the considered value have a low cleaning capacity, regenerability and period of maintenance-free (autonomous) operation, which causes problems in their use for automated SРР. The exacerbation of the problem of increasing the wear of marine diesel engines due to the need to use high-viscosity fuel with a low (up to 0.5 %) sulfur content, compounded by the products of catalytic cracking of oil with the inclusion of abrasive aluminosilicates is substantiated.  The need is highlighted to ensure functioning for 3–5 thousand hours without servicing the fuel and oil preparation system of marine diesel engines with A1 automation class. The principles of increasing the efficiency of self-regenerating filters are considered, which consist in the use of woven filter materials of a plain weave with an optimized structure (geometry), which makes it possible to balance their filterability and regeneration well.  The rationality of the formation of a filter element based on this material in the shape of a candle is shown, which ensures the rigidity of the structure, high transparency (open section coefficient) of the support frame and full use of the entire filtering surface both in cleaning and backwashing modes. The rationality of the carousel arrangement of the filter chambers has been proved, the use of the air pressure forming the back (flush) flow as a force has been proved.  The alternate action on the deposits of a multiphase medium (filtered liquid, air emulsion based on it and air) contributes to the effective removal of deposits. The possibility of an adaptive filter regeneration mode is provided, when the flushing index is formed taking into account the adhesion activity of the deposits. The motor efficiency of the СРФД-120 self-regenerating filter in combination with the СОСЦ-3 self-cleaning centrifugal separator is considered in the lubrication system in the 8ДН35/62 diesel engine. It is highlighted that the combination of full-flow filtration and bypass separation provides reliable protection of the marine engine from wear and a low aging rate of engine oil, which ensures resource-saving oil use in the most severe diesel operating conditions, i.e. its forcing and the use of high-viscosity fuels for deep oil refining. It has been proven that the autonomous operation of the СРФД-120 oil cleaner without maintenance can be 3-5 thousand hours. When it is used in the lubrication system of forced trunk engines together with a separator, the aging rate of engine oil slows down 1.4-1.6 times and it can work permanently. In comparison with the standard cleaning system, it was revealed that the superiority of the new combined fully automated system over the standard one in the 8ДДН35/62 diesel engine was expressed in a decrease in its wear by 40–60 %.  When replacing the filter mesh in the СРФД-120 filter with a woven fabric of plain weave with a nominal screening fineness of 10-20 microns, it can be used for fuel purification.

Analysis of legal regulation and technical requirements for packaged goods currently in force on the territory of the Russian Federation

Abstract. For more than 50 years, the entire world progressive community has been fighting the illegal enrichment of manufacturers who produce packaged goods in individual packages. During this time, a number of international and interstate standards were introduced to regulate the production and sale of prepackaged goods. On the territory of the Russian Federation, at the legislative level, supervision over the quantity of goods in individual packages was enshrined in Federal Law No. 102-FZ «On ensuring the uniformity of measurements», version 1993, but there is currently no effective mechanism for supervising prepackaged goods in packages. The new national standards for prepackaged goods in packages adopted in 2019 are intended to become a means of guaranteeing consumer protection.

Investigation of the effect of curing media on the properties of combined minced aquatic organisms and dried products based on them

Abstract. Studies of the functional and technological properties of combined mincemeats from aquatic organisms have been carried out, which have shown the possibility of their use for obtaining dried-dried products. Pretreatment of minced meat with different curing media improves rheological parameters, increases the organoleptic properties of the finished product. According to the research results, it is recommended to pre-hold the minced meat in the curing mixture before molding for 60–90 minutes at a temperature of 18 ° C. Sensory evaluation of dried chips showed that the processing of minced meat with curing mixtures makes it possible to obtain products with various organoleptic characteristics, both in color and in taste and aroma characteristics. The finished products had a slightly fishy, salty taste and smell with a touch of spices, a dense, not rigid consistency. The highest point score was given to the images of chips in which the minced meat from which they were prepared was aged in curing media made according to recipes No. 2 and No. 4.

Experimental justification of the use of marine polysaccharides in the composition of the cooling medium in the cooling technology of WBR

Abstract. The paper presents studies of the organoleptic and physical properties of chitosan solutions and its polyelectrolyte complexes with sodium alginate to substantiate the rational composition of the cooling medium based on marine polysaccharides in the WBR cooling technology. The results of studies of the antimicrobial properties of solutions of marine polysaccharides indicate the inhibition of microorganisms Escherichia coli, Bacillus spp., Sarcina spp. Based on the obtained data, taking into account the organoleptic evaluation, a rational ratio of chitosan and sodium alginate was selected for the production of ice based on aqueous solutions of these marine polysaccharides.
