СARP FARMING USING OF AGUACULTURE

Abstract. The article presents studies of the natural food resources of fish ponds of the young fish farm located in the Syrdarya region of Uzbekistan and experimental data on the cultivation of carp (Cyprinus carpio), withthe use of feed mixed and prepared in the form of a suspension. The control crystals for analysis of growthand calculation of the biomass of carps, was performed every 15 days. By September 15, of carp fingerlingsreached an average individual body weight of 77–200 g on average, fish productivity of 30–40 C / ha (bymid-September)..

THE USE OF THE INDICATOR PARASITE ANISAKIS SIMPLEX IN POPULATION STUDIES OF PACIFIC HERRING CLUPEA PALLASII(CLUPEIFORMES : CLUPEIDAE) IN SAKHALIN WATERS

Abstract. Quantitative indicators of infestation of herring in the waters of Sakhalin reveal a high infection rate of the fish in the basin of the sea of Okhotsk, off the Eastern coast of the island. Moreover, in some years almost100 % of the herring was infested. The so-called local populations as well as widely migrating SakhalinHokkaido herring are relative to the waters of this reservoir. In the basin of the sea of Japan, off the Westcoast of Sakhalin, the indicator values of herring infestation are much lower. The local population as well aswidely migrating herring of Sakhalin Hokkaido population are relative to this area. The analysis of causalityof herring infestation in these areas allows us to confirm the earlier conclusions about the populationstructure of herring inhabiting the waters around Sakhalin island.

Abstract. The article presents the results of the analysis of the work of the fishing fleet in the East-Kamchatka zone, with its subzones, in the period 2017-2018. The types of vessels that contribute to the greatest developmentof the resource potential of the fishing zone are identified.

INVESTIGATION OF THE WATER FREEZING SPEED IN TISSUES OF FISHING HYDROBIONTS

Abstract. In the course of the study, mathematical dependencies describing the rate of freezing of water over time in the tissues of commercial hydrobionts were obtained during their cryoprocessing. These dependencesmake it possible to calculate the amount of frozen water and the speed of its freezing at a certain point intime. Their use allows you to determine the required freezing time, during which the main amount of watercontained in the studied tissues of commercial hydrobionts goes from liquid to solid phase state

DEVELOPMENT OF A METHODOLOGICAL APPROACH TO INTEGRATION OF RISK MANAGEMENT IN THE SERVICE PROCESS AT PUBLICCATERING ENTERPRISES

Abstract. This article describes the process of service in catering and risk management of this process. A classification of risk management actions is proposed, which includes two categories: actions that take placein parallel with the process being studied and actions that are to be integrated into the structure of theprocess being studied. The risks of the maintenance process were identified, risk passports were developed,methods and risk management tools were selected for their subsequent integration into the process understudy. Using the IDEF0 graphic notation, a model for integrating risk management into the service processat catering establishments has been built.

THE EVALUATION OF QUALITY AND SAFETY INDICATORS READY-TO-EAT FISH PRODUCTS BY SOUS VIDE

Abstract. The main issues of sous vide technology are considered, the advantages and disadvantages of this technology and its application options in the production of fish products are described. The influence of lowtemperatureheat treatment in vacuum of culinary products on the example of boiled fish on the physic,chemical and organoleptic characteristics has been established. It is revealed that the use of sous videtechnology can significantly reduce losses during heat treatment and improve organoleptic characteristics.Assessment of the quality of finished products by microbiological indicator of safety in storage carried out.The use of sous vide heat treatment parameters of 50/40, 65/14 (temperature / duration, ° C / min) ensuresthe microbiological safety of the finished product.

STUDY OF THE EFFECT OF CHANGING THE TEMPERATURE CHARGE IN AIR CAPACITORS ON THE PARAMETERS OF THE REFRIGERATINGINSTALLATION

Abstract. In this paper, we study the effect of temperature pressure in air condensers on the parameters of the refrigeration unit. For the first time, mathematical equations for the dependence of the load on thecondenser and the heat transfer coefficient on the temperature head were derived.
