Abstract. Rabbit meat is a valuable dietary product; however, its short shelf life in a chilled state limits the possibilities of its distribution. The aim of this work was to develop and evaluate the efficiency of refrigeration technology for rabbit carcasses of the «Soviet Chinchilla» breed using gaseous carbon dioxide to extend shelf life. The objects of the study were rabbit carcasses weighing 1.3 ± 0.15 kg, selected after completion of the processing stage on the production line. The test samples were cooled with gaseous CO₂ obtained by sublimation of dry ice in a specially designed apparatus with a closed recirculation scheme of gas-air medium movement, while control samples were cooled by the conventional air method at 0 °C until the temperature in the muscle core reached the range of 0÷4 °C. The apparatus can also be used without CO₂ supply, which makes it suitable for standard air cooling. A comprehensive quality assessment of the meat was carried out based on the dynamics of active acidity and water-holding capacity throughout the entire period of refrigerated storage. It was established that CO₂ treatment promotes a more pronounced decrease in pH during the first day of storage, slowing down glycolytic processes and the rigor mortis phase. The dynamics of water-holding capacity correlated with changes in acidity, which confirms the retardation of autolytic changes in muscle tissue. The experimental data obtained indicate that the proposed method ensures the preservation of high organoleptic characteristics of the product over a longer period compared to air cooling. The obtained results substantiate the prospects of implementing the developed technology under industrial conditions to extend the shelf life of chilled rabbit meat while preserving its high quality characteristics and dietary properties.

Abstract. The article presents the results of a pilot testing of the author's food safety culture (FSC) assessment methodology developed based on the five key GFSI elements. The study was conducted at three fish processing enterprises in Primorsky Krai (conventional names: Enterprise 1, Enterprise 2, Enterprise 3). A mixed-methods design was employed: 5-point Likert scale survey (n=127), focus groups (6 groups, 42 participants), structured observation using a checklist (12 production zones, 48 measurements), and document analysis. The obtained data allowed verification of the methodology's operational feasibility, identification of industry-specific perceptions of FSC elements, and formulation of recommendations for adapting assessment tools. It was found that the most vulnerable FSC elements at the pilot sites were "Adaptability" (mean score 2.8) and "Risk Awareness" (3.1), while "Mission and Values" demonstrated the highest maturity (4.2). A revised version of the methodology is proposed, featuring a streamlined survey module (7 questions) and integrated monitoring of behavioral indicators.

Abstract. It was established that the development of tonic beverages with reduced sugar content belongs to the class of multicriteria problems, since sugar reduction must be accompanied by the preservation of organoleptic acceptability and compliance with requirements for the content of tonic components (primarily caffeine). It is shown that the application of the Harrington desirability function makes it possible to formalize beverage quality by converting heterogeneous indicators to a unified dimensionless scale and calculating an integral quality index based on weighted overall desirability. For the first time, a mathematical model for the comprehensive quality assessment of reduced-sugar tonic beverages is proposed, including: formalization of beverage quality through a system of partial responses; determination of weighting coefficients for quality indicators using the Analytic Hierarchy Process; and calculation of the integral quality index as a weighted geometric mean of partial desirabilities.

Abstract. This article examines the current problem of the low nutritional value of traditional pasta products made from wheat flour and substantiates the need to enrich them with biologically valuable components. Particular attention is given to the significance of this issue in the context of school nutrition, where the diet must provide growing children with all the necessary nutrients for proper development and health. In the first stage of the study, preferences for side dishes served in school cafeterias were analyzed through a questionnaire administered to students. The survey results showed that pasta ranks second in popularity (52 %), second only to mashed potatoes (61 %). This confirms the potential of using pasta as a base product for nutrient modification – the introduction of additional beneficial components without significantly altering the traditional taste characteristics. As part of the study, an original recipe for homemade noodles with Pteridium aquilinum puree was developed. Experiments were conducted to determine the optimal level of egg mixture replacement with Pteridium aquilinum puree, amounting to up to 40 %. A comprehensive quality assessment of the fortified samples was conducted, including organoleptic analysis and physicochemical testing (acidity, dry matter content transferred to the cooking medium, and weight gain coefficient during cooking). The results showed that the cooked noodle samples were yellow with a faint green tint and a smooth surface. Their taste characteristics were consistent with traditional pasta, complemented by a light, unobtrusive flavor and aroma of Pteridium aquilinum. All physicochemical parameters tested met established standards. This study confirms the feasibility of effectively fortifying pasta by adding Pteridium aquilinum puree, opening up new possibilities for improving school nutrition.

Abstract. The article presents the results of a comprehensive study on Japanese kelp (Saccharina japonica) water extracts. The authors investigated the dynamics of dry matter accumulation, changes in foaming capacity and foam stability, as well as shifts in the mineral profile of the boiling medium within a time interval of 15 to 90 minutes. Using mathematical modeling, extraction rate constants were determined and a theoretical limit for nutrient saturation of the system was established. A linear dependence between the concentration of dry matter and foaming capacity was identified. The study of mineral extraction dynamics showed that sodium and potassium cations reach maximum concentration in the solution by the 60th minute, while the extraction of calcium and iron cations requires prolonged boiling due to their binding with the organic matrix. Based on the obtained data, processing regimes for various applications were justified. It was demonstrated that extracts from short-term processing (up to 45 min) can be used as electrolyte bases. Prolonged boiling of the raw material (90 min) promotes the enrichment of extracts with divalent metal cations. Such extracts can be used for the production of functional concentrates. Thus, Saccharina japonica extracts can be considered a promising secondary raw material for the food industry, biotechnology, agriculture, and other fields.

Abstract. The article presents the results of experimental studies on the technological potential of Pacific salmon hearts using the example of chum salmon, which has high consumer demand, commercial importance, and nutritional value. The following characteristics of the secondary food raw materials of salmon (hearts) have been studied: size and mass composition, physical parameters, general chemical composition, biological value of proteins, biological activity of fats, relative biological value. The availability of technological potential in salmon hearts is confirmed by the resource sufficiency – 105.16 tons per year (using the example of 2025), the total chemical composition, the analysis of which allows us to classify this secondary raw material as medium-protein. The protein fraction contains 42.35 % of essential amino acids, while fat contains 44.84 % of polyunsaturated fatty acids. These results, including the relative biological value, indicate the high technological potential of salmon hearts.

Abstract. The production of fish meal, as a product in demand in animal husbandry and poultry farming, is an actual direction, as it allows to effectively solve the problem of processing fish waste, ensuring the rational use of natural resources. In the process of cooking raw materials, carried out in the production of fish meal by the pressing-drying method, it is necessary to reduce the oxidation processes that negatively affect the quality of the finished product. In order to reduce the total acidity of fish meal, which is largely dependent on the temperature of the fish waste cooking process, the Russian Pollock LLC upgraded its cooking boiler to allow for control of steam pressure, as well as the speed and temperature of cooking, which ultimately led to a significant reduction in the acidity of the final product, fish meal. As a result of optimizing the cooking process, the stability of the C2 and A subsystems increased. Consequently, the overall integrity of the technological process was improved.

Abstract. A study of consumer preferences for rolls and sushi offered by catering establishments in the Astrakhan Region and throughout the Russian Federation was conducted, with the aim of expanding their product range and improving their nutritional value. It was found that the most active consumers of these products are individuals aged 18 to 24 (33%), followed by those aged 25 to 44 (29%). Therefore, the opinions of these population groups, who are interested in Japanese cuisine and include rolls and sushi in their diets, are key to studying the possibility of expanding the range of these products. A study of the frequency of including rolls and sushi as a snack in the respondents' diets was conducted, and it was found that 65% of respondents purchased rolls and sushi weekly, 27% purchased them two to four times a month, and the remainder included rolls and sushi in their diets up to twice every three months. Research has shown that expanding the range of baked and signature rolls is relevant, with 43 and 35 % of respondents favoring them. Consumer preferences are determined by the location of roll and sushi production and sales, which must be taken into account when conducting research on expanding the product range. Regarding organoleptic quality indicators, taste (89 %) and product integrity (78 %) are the top priorities. Respondents rated smell (34 %) as less important, but this is offset by the sauces used in roll and sushi production.

Abstract. Choline is an essential feed component involved in phospholipid synthesis and the regulation of lipid metabolism. In ruminants, free choline is degraded in the rumen, necessitating protected forms. This study focuses on the development of a high‑concentration microencapsulated form of choline chloride containing 60 % active substance and the evaluation of its effects on growth performance, carcass morphology, and technological properties of beef cattle. The study included selection of the carrier and polymer coating, optimization of the fluidized‑bed microencapsulation process, determination of technological characteristics of the preparation, and a production trial on Simmental bulls (n=30). The resulting preparation contained 60±1.2 % choline chloride, moisture 4.7±0.3 %, granule size 0.8–1.5 mm, heat stability at 85°C (96 %), and an in vitro rumen bypass of 84–88 %. Daily administration of 15 g of microencapsulated choline increased average daily gain, improved feed conversion, and increased slaughter yield, accompanied by a greater proportion of muscle tissue and improved pH24, water holding capacity, and oxidative stability of meat. The study demonstrates the technological and biological efficiency of this domestically produced preparation and its potential for industrial feedlot systems.

Abstract. Current trends in the baking industry are characterized by the introduction of low-temperature preservation technologies, which make it possible to level out the seasonality of production and ensure uniform capacity utilization. However, long-term storage of frozen semi-finished products carries the risk of destructive changes in their structural and mechanical properties, which directly affects the quality of the final product. This paper presents the results of a study on the influence of refrigerated storage periods on a range of rheological and organoleptic parameters of rich bun semi-finished products made using an innovative recipe (with the addition of rolled oats). The samples were frozen to -18°C and subsequently stored for 1, 3, and 4 months. The control group consisted of samples examined immediately after freezing. It was found that a critical decrease in elastic-plastic characteristics and a deterioration in organoleptic properties are observed after 3 months of storage. The obtained data allow us to recommend limiting the shelf life of the studied semi-finished products at -18°C to three months to guarantee stable quality of the baked goods.

Abstract. The Siberian vendace is one of the main commercial species in the Indigirka River. Its average long-term catch in the period from 1942 to 2025 is 241.8 tons, which is 25.9 % of the total average long-term fish catch in the river. Over the past 10 years, the average vendace catch was 78.4 tons, or 10.8 % of the average catch in the same period. In the context of declining catch volumes, a study of the reproductive capacity of vendace may be important for predicting the state of its stocks. Based on the material collected in 2017–2019 during the spawning run of the Siberian vendace in the Indigirka River delta, the age composition of the spawning stock, individual absolute fecundity, and the reproductive capacity per 1000 females were analyzed. The absolute fecundity of the Siberian vendace is 8.0–114.7 thousand eggs (on average 29.0 thousand eggs) and increases with age, length and weight of the fish. A gradual rejuvenation of the spawning stock was revealed. Fish aged 3+ to 10+ years with SL 193–393 mm and weight 66–857 g take part in reproduction. During the spawning migration, age groups of female vendace aged five to seven years dominate (69.6 %). The range of variability of individual absolute fecundity is very wide even among individuals of the same size and age. The reproductive capacity of the Indigirka River vendace has been calculated at 24.7 million eggs per 1,000 mature females.

Abstract. Microplastic pollution of freshwater ecosystems poses a threat to biota and requires the development of effective bioindication methods. Bivalve filter-feeders, particularly the painter's mussel (Unio pictorum), are considered promising objects for assessing the selectivity of particle accumulation of various morphologies. The aim of this work is to determine the selectivity of microplastic bioaccumulation of different morphotypes in U. pictorum through a comparative analysis of enrichment factors. The study was conducted in 2025 in the waters of Lake Velje (Valdaysky National Park), which experiences low anthropogenic pressure. Water samples (Jeddy plankton net) and 20 mussel specimens were analyzed. Microplastic extraction was performed by filtration followed by microscopy, with identification carried out in accordance with contamination control protocols. The dominance of filamentous particles was established both in water (71,6 %) and in mussel organisms (63,4 %). The color distribution (predominance of black, red and blue fibers) indicates anthropogenic sources of input (textile wear, degradation of packaging and fishing gear). Based on the calculation of enrichment factors (EF), accumulation selectivity was revealed: maximum values were observed for fragments (EF=1,06), while for fibers (EF=0,62) and films (EF=0,28) they were lower. A dependence of fiber retention on their length was shown: the proportion of fibers ≥1,5 mm in mussels is only 32,2 %. A high correlation of the color distribution of fibers in water and mussels (r=0.97; p<0.05) confirms the representativeness of U. pictorum as a bioindicator. The obtained data are important for assessing the trophic transfer of microplastics, environmental risks, and the hygienic safety of freshwater fishery products. The species can be recommended for environmental monitoring programs.

Abstract. There are 205,295 lakes in the Lena River basin (excluding the river delta) with a total water area of 37,655 km², which is 1.5 % of the total area of its basin. Of these, 15,766 lakes are in the upper reaches, with a total area of 14,600 km² (83.3 % of the lakes are located in the Vitim basin), 176,691 lakes with an area of 9,462 km² in the middle reaches (67.7 % of the lakes are located in the Aldan and Vilyuy Rivers’ basins), and 12,838 lakes with an area of 7,693 km² in the lower reaches. There are more than 30,000 lakes in the Lena Delta, the absolute majority (at least 80 %) of which have a small surface area (up to 0.001 km²). In the lakes, roach, silver and Yakut crucian carp, bream, pike, peled, arctic char, and perch are caught by industrial and amateur fisheries. The industrial catch is 1.24 thousand tons (about 60% of the river catch). The benthocenosis of the upper reaches of the lakes is represented by 13 systematic groups. The abundance and biomass of zoobenthos in the tributary lakes are: in Vitim – 22.66 g/m² and 2828 specimens/m², in Kirenga – 16.10 g/m² and 8017 individuals/m² (average for tributaries: 19.38 g/m² and 5422 individuals/m²); in the lakes of the Lena channel - 1.70 g/m² and 233 individuals/m². In total, for the lakes of the upper reaches of the Lena: 3693 individuals/ m² and 13.49 g/m². In the lakes of the Lena middle reaches, the benthic community is represented by 17 systematic groups. The highest biomass is recorded in the lake ecosystems of the Vilyuy basin, where it is (average for all lakes) 10.23 g/m² and 3289 individuals/m². In the lakes of the lower reaches and the Lena delta, the benthic community is represented by 9 systematic groups. Amphibiotic insects make up about 75 % of the benthic biomass, approximately 30 % being chironomid larvae. The abundance and biomass of zoobenthos are (average for all lakes of the lower reaches and the Lena delta) 9.40 g/m² and 1244 individuals/m². The average biomass of benthic organisms in the lakes of the Lena River basin is 12.63 g/m², with an average abundance of 2,044 individuals/m².

Abstract. This study is motivated by the need to formalize the problem of optimally placing pots on a fishing vessel's deck for subsequent algorithmization and process automation. The core issue lies in the absence of a comprehensive mathematical model that accounts for geometric constraints and the specifics of trap arrangement on the working deck during both vessel transit and fishing operations. The paper presents the development of a mathematical model for placing conical traps on a deck represented as a rectangular area. The shape of the working zone can be configured using obstacles of different form. The research methods involve the formalization of constraints, the development of objective functions, and the construction of geometric models for the obstacles. The results are presented as a system of equations and inequalities describing the conditions for correct placement. The proposed model adequately describes the practical problem and can serve as a basis for developing optimization algorithms.

Abstract. A comparative analysis of voltage regulation methods for controlling the light output of fishing equipment should be conducted taking into account the energy efficiency of the ship's power supply system. Using control characteristics, mathematical analysis, and computer modeling, it is convenient to study physical processes and analyze various equipment operating modes, allowing the obtained data to be used to adjust the control system. Regulating the voltage of fishing equipment using semiconductor devices can significantly improve the efficiency of catching fish species that respond to light from surface and underwater sources.

Abstract. The search for new technical solutions to increase the efficiency of aquaculture reproduction by developing formulations of probiotic feed preparations with biologically active properties based on Rhodotorula yeast is an urgent task. Algae from the shallow coastal zone of the bays of the Sea of Japan were selected as a potential source of Rhodotorula yeast. The factors of distribution yeast communities in the studied marine biotopes were: sampling site, depth and type of algae. From 16 studied samples substrates of marine genesis (washings from glass with seawater, algae), cultures were isolated, based on the data obtained, an atlas was formed, including a description of cultural growth and a microscopic picture. The frequency of occurrence of yeast communities is 87.5 %, with 21 % of them being the desired species Rhodotorula spp. It has been shown that the most common sources of yeast release are Rhodotorula spp. They turned out to be: the gulfs of Slavyansky and Vostok, the Sea of Japan, and the algae of Ulva lactuca. There are some distinctive features in the nature of the cultural growth of the isolated yeast cultures, expressed in the variability color of the colonies (from pale pink to coral), the degree of their water content (slippery or dry), the shape (round or irregular), and the surface (smooth or wrinkled).

Abstract. This article presents the results of the simultaneous introduction of two phytohormones - salicylic acid and indole-3-butyric acid - into the culture medium during cultivation of the microalga Chaetoceros muelleri. The study examined the effects of the hormones on the levels of key biochemical elements - protein, carbohydrates, lipids, and chlorophyll - in the microalgae culture. It was found that the introduction of the studied phytohormones did not result in increased cell proliferation compared to the control group. The study demonstrated that the simultaneous application of two phytohormones resulted in both an increase and a decrease in the levels of the biochemical components examined in the Chaetoceros muelleri culture. Stimulation of carbohydrate synthesis was observed on the third day of cultivation. Further cultivation resulted in a decrease in carbohydrate content in the experimental group compared to the control. It was found that the addition of a phytohormone mixture resulted in a 1.7-fold increase in lipid content in the microalgae culture after 7 days of cultivation, compared to the control group. Furthermore, lipid content in the experimental group exceeded that in the control group throughout the entire experiment. The addition of phytohormones inhibited protein and chlorophyll accumulation throughout the entire cultivation period. The article also compares the effects of both a mixture of the hormones examined and each hormone individually on the growth and productivity of the microalgae culture Chaetoceros muelleri.

Abstract. The article is devoted to the theoretical justification of a cyber-physical concept for solving the problem of reduced efficiency in purse seine fishing for pelagic fish. This problem is caused by the premature escape of the school due to the fish's reaction to the hydroacoustic noise of traditional diesel vessels, as well as the deformation of the fishing gear by underwater currents. The paper proposes the concept of an intelligent control system (ACS) "Autopurse", which coordinates the joint maneuvers of the main seiner (mother ship) and an autonomous auxiliary vessel (AVS) – an unmanned electric catamaran based on the standard place of a lifeboat. Based on the continuous analysis of the fish school parameters (velocity vectors, migration, and reaction to stimulus), the artificial intelligence (AI) of the system automatically selects the fishing mode and forms the optimal navigational setting trajectory using the Line-of-Sight (LOS) algorithm. The work is theoretical in nature and is aimed at integrating advanced navigation algorithms with the biological parameters of the target species and the operational characteristics of unmanned vessels.

Abstract. The work is based on a study of pollock fishing processes in the 6105 area.1 taking into account the fishing situation by the nature of pollock records in 2025, a model for calculating the fishing of a vessel has been developed. The vessel of the ST-191L project was taken as objects, the daily catch for processing was determined to be 500 tons/day, 100 tons of fillet production, 2312 tons of hold, the Atlantic 1580 trawl was used, a bag for 200 tons. The simulation of 31 voyages of the CT-191L project vessel was carried out with three variants of fillet production (100 tons, 200 tons, 300 tons), which showed, with soft modeling, the average values of output per voyage of 42077.26 tons (±387.52), 17 overloads correspond to the actual work of CT-191L vessels in the pollock fishery, The characteristics of the trawl system are sufficient to master possible catches in the area up to 92-95%. The use of the Atlantic 1660 trawl with a 250-ton bag compared to the Atlantic 1580 trawl with a 200-ton bag increased the catch by an average of 12.9%. At the same time, the catch for the Atlantic 1580 trawl with a 250-ton bag decreased by 1.7%. Increasing the bag to 300 tons resulted in a lower production per trip for the Atlantic 1660 trawl compared to the 250-ton bag. Thus, the modeling results, taking into account all processes, showed an objective picture of the fishery, where there are no linear approaches to the selection of trawl and bag sizes, characteristics of daily aquatic organism aggregations, trawl system selection processes, and its setting, all of which affect daily fishery performance. In actual planning, it is necessary to take into account that all random factors, primarily related to changes in the fishing situation, may not be taken into account, therefore, when planning fishing activities, it is necessary to focus on the lower indicators of the output per trip.

Abstract. Research in the 138th voyage of the CKP NIS "Professor Vodyanitsky", which took place in November-December 2025, was carried out according to the monitoring research program of the A.O. Kovalevsky Institute of Biology of the Southern Seas of the Russian Academy of Sciences. Hydroacoustic studies were conducted using a Simrad EK-500 hydroacoustic scientific echo sounder with stationary antennas at 38 and 120 kHz. The purpose of the studies was to assess the impact of temperature on the distribution of fish aggregations during the transitional autumn-winter season. Fish echoes were recorded both in the pelagic zone and in the bottom layer. The heterogeneous nature of the observed aggregations can be attributed to the influence of temperature. Temperature measurements indicated that the study area was in the phase of active autumn transformation.

Abstract. The international maritime community has recognized the importance of preparing shipping industry for switching to green technologies. The relevant policy set out in the IMO 2023 Strategy to Reduce Greenhouse Gas Emissions from Ships sets the overall goal of achieving zero greenhouse gas emissions from international shipping by 2050. This strategy is to implement zero- or near-zero-emission technologies and energy sources. It is supposed that by 2030 the share of such technologies should amount to between 5% and 10% of the total energy consumed by international shipping. The work of future seafarers is likely to become significantly more difficult, as new fuels and technologies will require increased immersion in digital and automated work environments which will likely impact the upcoming revision of the International Convention on Standards of Training, Certification and Watchkeeping for Seafarers (STCW). Seafarers will have to be appropriately trained when shipping companies implement alternative fuel technologies. The purpose of this research was to review the issues related to readiness of ship crews to implement "green" technologies in maritime shipping. The article observes the challenges caused by switching to alternative fuels that can reduce global greenhouse gas emissions. It is noted that switching ships to alternative fuels requires not only new technical solutions but also crew special training. Furthermore, the lack of regulations establishing requirements to competency of maritime specialists operating the ships powered by alternative fuels prevents from active implementation of relevant training programs for maritime specialists.

Abstract. The dynamic system "trawler vessel" together with a deep-sea trawl in conditions of the trawl (trawl board) engagement with the bottom is considered. The problem of solution using Laplace transformations in time is formulated. Analytical dependences are obtained for determining the forces in the vaer and studying the dynamics of the vessel.
