Abstract. Based on the literature data and information provided in the antimicrobial peptides (AMP) database APD, we have designed a cross-linked cationic hydrophobic alphaspiral AMP peptide with a low molecular weight consisting of 22 amino acid residues. The percentage of each amino acid residue in the peptide is as follows, %: Leu – 14, Cys – Ala, Trp, Pro, Asp and His by 9, Gly and Glu by 5, Lys - 18 and Arg - 14. The total hydrophobic ratio determined by APD is 41%, the total net charge is + 6.5, the hydrophobicity of the peptide according to Wimley-White in the whole residue is 4.14, the molecular weight is 2714.297 Yes, the molecular formula is C123H199N41O25S2. The protein binding potential (Boman index) is 2.57 kcal/mol. The peptide sequence contains an even number of Cys and can form a defensin-like beta structure bound by dulsulfide bonds (~16-60 AA residues); spiral structures containing S-S bond(s) or multiple thioester bonds, as in lantibiotics. Theoretically, the crosslinked peptide created is a new AMP because it is not identified in known AMP databases and is characterized by antimicrobial activity, which is confirmed by studies conducted in the AMP DRAMP database.

Abstract. The aim of the study was establish the technological efficiency of using camecel FW 200 in the technology pasteurized pates of prolonged storage from rudd (Tribolodon hakonensis (Gunth.) and terpug (Hexagrammos otakii). Tasks: to investigate effect of the mass fraction camecel FW 200 on the water activity crude technological emulsion and the organoleptic properties pasteurized pastes; to investigate effect of storage duration on organoleptic properties and sanitary condition of pasteurized pastes. The initial water activity of rudd–based samples was shown to be 0.972 %, and terpug–based samples – 0.957 %. It was found that an increase in the mass fraction of camecel FW 200 to 2.5 % in crude technological emulsions is accompanied by a decrease in water activity: up to 0.964 % for rudd and 0.942 % for terpug. The optimal values mass fraction camecel FW 200 were determined, which amounted to 1.0 % for rudd and 1.5 % – for terpug. The effect storage duration of pasteurized pastes on organoleptic properties and sanitary condition has been studied. According combination of microbiological parameters and organoleptic properties, prolonged shelf life of pasteurized pates has been established: 4 weeks for rudd; 5 weeks for terpug.

Abstract. Due to the widespread use of the process of evaporation in various industries, monitoring the evaporation process seems to be quite relevant and practically significant. The paper presents the results of the study dealing with the crisis of heat transfer of the first kind in evaporating the sodium chloride solution. The aim of this work is to adapt the criterion equation of the first critical heat flux density for true solutions This equation was obtained by one of the authors of the article at the Murmansk State Technical University, and is valid for heterogeneous liquid food media. Experimental studies were carried out in two stages using physical modeling, observing geometric and physical similarity according to the original method developed at the Murmansk State Technical University. The studies were carried out on aqueous solutions of sodium chloride (sodium chloride) of various concentrations for three heating modes with natural convection. In the course of the experiments, an attempt was made to determine the sections of the evaporator tube, where the crisis of heat exchange of the first kind is most likely to occur, experiencing the greatest heat load, that eventually causes the wall’s dead burning. The сalculation of the heat transfer coefficient and critical heat flux density necessary to adapt the criterion equation of the first critical heat flux density was carried out according to standard methods using Microsoft Excel software. The main result of this stage of scientific research was the final achievement of the goal. The resulting equation allows to predict the appearance of the crisis of heat transfer of the first kind in evaporating the solution under study, to continue active movement towards the creation of the universal equation for determining the parameters of the type of crisis under study for vertical tubular surfaces under natural convection, and to develop rational operation modes for existing evaporators and the ones being designed

Abstract. The article presents a theoretical analysis of bulk filtration, highlighting the most significant factors influencing throughput and the quality of the filtrate. Additionally, it discusses the results of an experimental test on the influence of external mechanical effects on the properties of water, its solutions, and aqueous suspensions (distilled water, seawater, and chalk suspension) using physical (glass) models. The study also examines the throughput capacity during filtration of both initial and activated aqueous suspensions (those with modified properties) through naturally compacted and vibrationally compacted bulk dispersed media. Based on the modeling results, the experimental setup (bulk filter) was modernized to include a vibration activator for compacting the filter layer and a mechanical activator for activating the initial aqueous suspensions before filtration. A phenomenological model of this filtering device was constructed, combining elastic and viscous elements. From this, a calculation model was proposed, describing the functioning of the object under study in physically meaningful terms. Finally, the results of physical modeling on an experimental setup — a bulk granular filter at the LLC enterprise Vostok Product — were summarized.

Abstract. The article presents the results of a comprehensive study of the experience of using the enzyme preparation from the hepatopancreas of Chionoecetes opilio (EPCO further on) as a maturing agent in the technology of low-salted salmon fish fillets (with the use of rainbow trout raw material). The aim of the work is to substantiate rational technological modes of salting salmon fish fillets via injection. The influence of the method of injection of EPCO (by injecting brine containing preservative and maturing agent into the fillet thickness OR by injecting brine containing only preservative) and the method of fillet pre-salting (dry crystal salt OR with a brine containing maturing agent) on the mass-exchange processes occurring in the fillet thickness is studied, as well as the kinetics of the fillet salting process, changes in salt concentration gradients, specific intensity of fillet saturation with salt and salt diffusion coefficient in the fillet thickness during salting and subsequent maturing and storage. It is estimated that the most uniform salting and achievement of the best organoleptic characteristics of rainbow trout fillets (mass fraction of fat 9,02±1,86 %, average fillet weight before portioning and vacuuming 820±50 g, specific surface of fillet pieces after portioning 0, 08±0.016 m2/kg) after maturing and during storage at comparable value of yield of finished products (109±2 %) provides salting of fillets by brine injection with density of 1.15 g/cm3 with addition of EPCO up to concentration in brine 0.04 % and a complex preservative (sodium benzoate and potassium sorbate) to a concentration of 1 % in brine, at a temperature of minus 2 ± 1 °C, with fillet salting with dry crystalline salt of a given salinity of 4.0 % (salting, maturation and storage temperature of 6 ± 2 °C). Studies of biochemical changes in fillet tissues during maturation, estimated by buffering and mass fraction of amine nitrogen, have shown the differences in the nature of mass transfer processes under the influence of changes in tissues caused by the action of EPCO.

Abstract. A comprehensive technological scheme for the production of food and feed products from recycled crab raw materials, which accumulate in significant quantities during the processing of Far Eastern commercial crabs, is proposed. The raw material in the technology is a hydrolysate obtained by autoproteolysis due to its own enzymes of mixed waste from crab production. The composition of the waste includes the cephalothorax, including internal organs, and the shell, including walking limbs. The raw materials are rich in both protein and minerals. In this connection, two fractions are formed during the separation of the hydrolysate: liquid and dense. It is proposed to direct the first fraction to the production of a food product popular in Oriental cuisine – «Bisque sauce», and use the second fraction, rich in protein and mineral components, to obtain a protein-mineral feed additive. An assessment of the organoleptic properties of new products and their chemical composition is presented. The experimentally obtained data allow us to draw the following conclusions: a food product «Bisk sauce» with a high organoleptic assessment has a low energy value, and a protein-mineral feed additive is characterized by the presence of almost equal proportions of protein and minerals, which determines its feed value.

Abstract. Refrigeration treatment leads to a decrease in the nutritional value of products. This is due to the physico-chemical changes in proteins. Therefore, scientists face the most important task of preserving the activity of individual components and biologically active substances in the process of technological exposure and cryopreservation. One of the ways to solve this problem is the use of substances that can affect the quality of the food system during low-temperature processing, including the use of salting, called cryoprotectors. In this regard, the aim of the work is to study the effect of cryoprotectors on the physico-chemical parameters of minced fish from pollock during low-temperature salting. The results of the conducted research substantiate the rationality of the study of composite cryoprotectors. Composite mixtures of sorbitol and mixtures of cryoconcentrates "Mineralocorrecting" were used as cryoprotectors. The obtained research results prove the manifestation of the studied composite cryoprotectors of a significant cryoprotective ability for minced pollock at low temperature salting, as evidenced by a decrease in cryoscopic temperature. A mixture of cryoprotectors 2 % sorbitol and 2 % MNC reduces the cryoscopic temperature of minced pollock at low temperature salting by 1.0 0C, a mixture of 3 % sorbitol + 3 % MNC – by 1.7 0С with a mass fraction of NaCl 5 %, with a mass fraction of NaCl 8 %, the decrease in cryoscopic temperature is 2.2 0С at a concentration of a mixture of cryoprotectors 2 % sorbitol and 2 % MNC, and with an increase in the mass fraction of cryoprotectors to 3 % (both sorbitol and MNC) by 3 0С compared with low-temperature salting without the use of cryoprotectors. The results of the study of the effect of composite cryoprotectors on the functional and technological properties of minced pollock at low temperature salting prove their significant effect on water retention and water retention.the processing capacity, as well as the mass fraction of water. The introduction of composite cryoprotectors into pollock minced meat increases VUS by 9.2–20 % with a mass fraction of NaCl 5 %, and by 5.3–8.9 % with a mass fraction of NaCl 8 %. The increase in BCC indicators is 11.3–19.9 % with a mass fraction of HCl of 5 %, and 3.4–7.0 % with a mass fraction of HCl of 8 %. The mass fraction of water in minced pollock is significantly reduced when using composite cryoprotectors – at least up to 65.9 %.

Abstract. Research has been conducted, which presents data on consumer preferences regarding fish culinary products to study the possibility of expanding the range of fish culinary products. As a result of the research, it was found that the survey covered the main age groups of the population and representatives of all social strata of society, in which the following age groups are most widely represented - 25-44 years (39%), 18-24 (28%) and 45-59 (16%).
According to the observations of the surveyed consumers of fish culinary products, the following products are presented on the market - canned fish (83%) and preserves (42%). Fish flour culinary products are preferred by 18% of consumers, and minced products - no more than 10%. But consumers supported the proposal to expand the range and presentation of fish sausages on the market.
Research has revealed the most important criterion of food products - quality, shelf life among consumers is ranked second in importance. The respondents consider the appearance and absence of fish bones to be important organoleptic properties of fish culinary products. The least interesting organoleptic property of fish products is considered to be smell, and in terms of packaging properties, respondents consider that compactness and attractiveness of packaging are necessary.

Comprehensive assessment of the quality of a fish culinary product based on Thorny Skate

Abstract. The article presents the results of qualimetric study of a new fish combined culinary product with prolonged shelf life «Thorny skate and cod, baked with potatoes and mushrooms in cream sauce». The innovative technological solution in the development of the product was: the use of underutilized object of fishing in the Northern basin, thorny skate Amblyraja radíata (Donovan, 1808), as a fish raw material and rapid (shock) freezing of the finished product to prolong its shelf life without the use of synthetic preservatives. The development of the product solves the problem of involving valuable (but practically unused nowadays) aquatic bioresources in the production of food products. In addition, the product expands the range of food products enriched with valuable nutritional components in the promising, steadily growing segment of fish products such as fish culinary products with prolonged shelf life. A special scale was developed for a comprehensive assessment of the quality of the new product based on the principles of qualimetry. A set of physical and chemical studies of experimental batches of the product and its organoleptic evaluation was carried out. The content of proteins, fats and carbohydrates in 100 g of the product was experimentally established, which amounted to 8.45±0.05 g, 8.15±0.04 g and 9.30±0.10 g, respectively. Studies have established the absence of limiting essential amino acids in the protein of the product. It has been established that one portion of the product with a net weight of 308 g (one consumer package) provides at least 41% of the daily requirement in essential amino acids, and for phenylalanine and tyrosine this indicator amounted to 100 and 96.4%, respectively. The experiment confirmed the content of chondroitin sulfate in the product from 78 to 172 mg per 100 g, which allows to classify the developed culinary product as enriched with chondroitin sulfate.

Abstract. Fish by-products are of great interest for research in order to obtain value-added products from them. In addition, they are also a valuable source of numerous compounds needed for the production of various food additives. Fish liver, a solid component of fish processing waste, has special biological properties and can be used to develop unique food ingredients, but it is currently mixed with other fish by-products, and at best processed into fishmeal or oil, and at worst disposed of. To maximize the preservation of substances useful to the human body in the liver, it is dehydrated through the drying process and stored in specially selected conditions. When determining a rational method for removing water from thermolabile materials, including the liver, choosing their optimal final moisture content and modeling the processes of heat and mass transfer of this material, it is recommended to study the structural and mechanical properties, especially the density and hygroscopic properties of the product. The liver of the catfish (Silurus glanis) was used as the object of the study. Raw and dried catfish liver were studied. The dependences of the values of density and hygroscopic properties of the catfish liver on its humidity in the specified ranges of their variation have been established. A comparison of the presented results with known data on similar materials shows that they are consistent and therefore can be used in the engineering practice of the food industry.

Abstract. The object of the study was the autumn chum salmon of the Udarnitsa River. In the course of the work, the size-weight composition is analyzed, the ratio of length and weight is given, the characteristics of the stages of gonadal maturity and fertility are given. The features of the spawning course of chum salmon during the years of research have been clarified. It was found that the average length and weight of chum salmon spawning in the Udarnitsa River was 67,3±0,4cm and 3368,6±88,5 g in 2021, 67,6±0,3 cm and 3058,7±56,9 g in 2022, 65,6±0,3 cm and 3201,5±59,6 g in 2023. A study of the mass composition of chum salmon over the past 3 years showed that the modal class for 3 years formed chum salmon weighing 2901-3400 g. The largest males were caught in 2021 (6130 g), and females were larger in 2021 (4820 g). The ratio of females to males was 34:66% in 2021, 55:45% in 2022, and 65:35% in 2023. Females had gonads of IV and V stages of maturity. During the years of research, the maximum amount of chum salmon entered the Udarnitsa River in September 2021.

Abstract. The article presents the results of a study of halibut longline fishing. The main problems and shortcomings of bottom and demersal longlines are identified and solutions are proposed to improve the efficiency of the fishery. It has been established that the most appropriate vessel for halibut longline fishing is a medium-tonnage vessel of the STR-503 type with an automated longline system Mustad «Autoline». It is shown that the reasons for the insufficient development of the TAC for halibut are mainly reduced to organizational and administrative problems. The main directions of technological processing of halibut are shown. The resulting by-catch of fish should be accumulated, frozen and sent for further processing. According to their technological properties, these fish were divided into 4 groups and recommendations were given on the direction of their use.

Abstract. The weight on the vertical longlines ensures the task of immersing the longline to depth, and its characteristics affect the speed of immersion and the trajectory of immersion. Accordingly, the speed of immersion affects the volume of catch, and nonlinear trajectories lead in some cases to entanglement of adjacent longlines and stopping the catch. The work analyzes the existing in world practice weight designs, based on the identified characteristics, a weight design with a through hole is proposed that has a lower drag coefficient compared to known weights and provides better stabilization during immersion. The values of the drag coefficient at different speeds for the parametric series are obtained.

Improvement of fishing tools for salmon fishing in rivers on the example of the Amur River

Abstract. The main commercial river for salmon fishing is the Amur. Since 2014, the pressure on the population has increased, which has led to changes in the rules and various regulatory schemes, this leads to restrictions on the use of fishing gear, in particular drift and fixed nets, the number of runs and areas where fishing can be carried out. At the same time, studies on the behavior of salmon in rivers associated with the interaction of fishing gear and their improvement have not been conducted for a very long time, since the main fishing was carried out at sea. The work presents data for several years of research on the behavior of salmon in the Amur River, the development and implementation of fishing gear taking into account these data, which have shown the effectiveness of work in the fishery.

Abstract. In virtual reality applications, it is necessary to visualize simulated natural processes in real time and with acceptable quality. The article discusses the formulation and solution of the problem of developing a mathematical model and program code on a graphics processor unit capable of deforming a static three-dimensional model of a visualization object in real time in accordance with the specified time-dependent characteristics. For example, the visualization of fish in a virtual installation of an aquaculture recirculating system, which is a technical system for growing fish, is considered. A method, a mathematical base and a computational algorithm for deformation of static three-dimensional models of soft bodies obtained using spatial scanning devices capable of modifying (deforming) the body during visualization on a graphics processor are proposed. Deformation is carried out using secant surfaces described by mathematical dependencies related to both deformation parameters and model time. The coordinates of all vertices of the surface mesh of the body and all normal to the surface defined in the three-dimensional model are calculated. The article presents the implementation of the algorithm on a vertex shader created on HLSL programming language. The result of visualization of fish during bending is given.

Abstract. The work is devoted to the study of the physical process of lifting catches on forage trawlers by the slip method. The work carried out earlier on a mock-up experimental installation made it possible to obtain the dependence of the force arising at the exhaust end of the exhaust winch on various factors characterizing the ship structures and the field scheme. To accept them when performing calculation actions, when designing fishing schemes and choosing fishing complexes, it is necessary to test the results obtained in marine conditions. The scientific research vessel STM Atlantis was chosen for the research, since it conducts fishing activities only for scientific purposes and has a fishing scheme for forage trawling. The article describes the procedure for preparing and conducting experimental work on the scientific research vessel STM Atlantis, describes the fishing scheme, experimental measuring equipment that allows measuring the forces arising at the exhaust end and the weight of the bag, defines the object of research, which is the trawl bag M-45 trawl 70/300. Work has been carried out to determine the shape of the slip flooring. A series of experimental works was performed in the commercial version, in which the sampling was carried out using a slip method, the end part of a trawl bag with a length of 20 m and a weight of 180 kg was selected. In the process of marine tests, the results of measurements of the force arising at the exhaust end during the sampling of trawl bags by slip devices of fishing vessels were obtained. To compare the experimental field data with the results of model measurements and calculated values obtained using the equation, the values are converted to dimensionless quantities. A comparison of the data obtained as a result of calculations using the equation and full-scale marine measurements showed a good convergence of over 90%, with an accuracy of 0.95, which allows us to recommend planning modes for lifting the latter onto the deck of a ship on a model installation. The marine inspection confirmed the possibility of studying the physical process of lifting a trawl with a catch on model trawl fishing systems.

Abstract. Based on the review and analysis of existing means of mechanization of trawl fishing, the article sets a goal and defines a methodology for the development of a mobile, small-sized trawl winch with a mechanism for self-regulating efforts in containers on small vessels. The main problem in the design of a fishing winch is the lack of a power plant to drive this design. This is especially important for floating vehicles (catamarans) used for scientific research in inland waters. On the basis of existing methods, appropriate calculations (power and kinematic) were carried out, allowing in the conditions of the workshops of the Department of Industrial Fisheries to manufacture assemblies and parts, as well as to carry out the layout and assembly, and debugging of the designed fishing winch. Construction, design, and calculations. To analyze and evaluate the efficiency of the system, as well as to carry out a number of works on the modernization of the scheme. The method of work is data analysis and collection, development of a fishing scheme, selection, description and testing with fishing equipment, design of a fishing trawl winch. The results of the work – a small-sized trawl winch with a device for self-regulating forces in containers was designed and manufactured for Catamaran-type vessels.

Abstract. With the development of global ocean engineering, the issue of fire occurrence on marine vessels is receiving more and more attention. Hundreds of accidents caused by fires have been recorded in the period of 2023 alone. Most fires on ships occur in the engine room, where the three components of fire are abundant: fuel, oxygen and ignition source. These not only cause the fire, but also fuel and intensify it. The occurrence and development of engine room fires are characterized by rapid fire spread and great difficulty in extinguishing fires. For this reason, fire safety is primarily about preventing fires, and only then about timely detection and effective fire suppression. Currently, fire remains the main cause of ship losses. Fire damage can be significantly reduced by reducing the response time to fire detection and by taking effective fire fighting measures.

Abstract. The article provides information on the volumes of greenhouse gas emissions during the Okhotsk pollock expedition, using the example of typical vessel designs, the capacity of marine power plants and types of fuel. The results of a comparative analysis of the volumes of emissions when using three types of fuel are shown: HFO, MGO, LNG. It was found that the maximum greenhouse gas emissions in CO2 equivalent occur when using bunker fuel oil, and the minimum when using liquefied natural gas. The results show the need to develop a strategy for the decarbonization of Russian fisheries.
